Weeknight Dinners

A busy week doesn’t mean you have to sacrifice healthy and tasty fuel. During a hectic week of work I caught myself not having as much time or energy to cook when I got home but I know that eating take-out or cereal would only make me more tired and stressed in the long run.

Luckily with some smart shopping I was able enjoy nutritious and yummy meals without spending hours in the kitchen. Using some of these tricks and items My cook time went down without any change to my meal quality.

Some of the easy to cook ingredients I bought include a bag of pre-chopped kale salad, pre-diced squash and sweet potato hash and a pre-layered chicken parmesan all from Trader Joes. From the local grocery store I also picked up sweet potato fries, ready-to-bake panko-crusted cod and riced cauliflower among other groceries. The key to buying semi-prepared food like this to take a look at the ingredient list. You want to check that the ingredients are only the thing you would expect to see in that meal and not preservatives and chemicals you’ve never heard of before. Overall, Trader Joe’s is a great stop for things like this but most grocery stores will have similar products, just remember to check the labels.
