A new staple

Hi everyone, sorry for such a long hiatus but I’m excited to be back. For my first post in awhile I want to share a product that I’ve really been enjoying lately – corn tortillas! As someone who doesn’t eat gluten or like bread I tend to miss out on bread/dough dependant foods like sandwiches and wraps but I really miss these classics and the convenience that comes with them.

These corn tortillas have also allowed me to add some more (gluten free and whole grain) energizing carbohydrates to my diet. Carbs are a super important fuel and energy source, especially for athletes, but it’s really important to get quality ones. A lot of carbohydrate sources are also super processed and high in sugar (think pizza dough, white bread and sweet cereals) so it is important to pay attention to your carb sources and to eat low-glycemic carbohydrates. The tortillas I’ve been eating are “La Banderita Yellow Corn Tortillas” which pack 18g of carbohydrates, 100 calories and only 1g of sugar into 2 tortillas.

The other great thing about these tortillas is how easy and convenient they are. Simply pull them out of the bag and heat them on the stove top for about 2 minutes a side or until lightly browned. The best part is how well they store, just close the bag tightly and put them away until the next meal. They have a great taste and are super versatile, keep scrolling to see all that I’ve made with them!

Not pictured are breakfast burritos, gluten free pizza and quesadillas, and dessert tortillas (filled with fruit and chocolate).
