Last week I was making dinner for and babysitting my host siblings while the adults went to see a show. I wanted to make something fun that we could all do together and my host siblings love pizza so that’s what I went with. For the kids I bought crust and toppings and for myself I tried something a little new.
I’ve experimented with cauliflower and other alternative, veggie-based crusts before but if you can’t buy them pre-made they can take a lot of work. I wanted something super simple since I would also be multi-tasking with keeping them entertained. I decided to use my favorite: sweet potatoes. These were super tasty and filling. Not to mention the totally allowed me to join in the make-your-own pizza fun without eating something that will make me feel bloated. Whether you’re looking to add some nutrition to a classic or fill a melty-cheese craving give these a try!

Ingredients: Sweet potato (try and get ones with larger diameters), olive oil, shredded cheese, pesto or pizza sauce, toppings of your choice
Directions: Slice sweet potato into ¼” pieces, brush with oil and lightly salt/pepper, bake in oven at 350°F for 10 minutes. Then flip and bake for another 5 minutes. Remove potatoes and let them cool slightly (≈5 mins) before adding toppings.
Add topping of your choice. Put pizzas back in oven for 10 more minutes then remove, allow time to cool, and enjoy!
One of my favorite things about this was having several mini “pizzas” allowed me to make several different mixes of toppings opposed to making just one pizza with one sauce and topping set throughout. Some of my creations included: pesto, chicken and onion; pizza sauce, pepperoni and pineapple; pesto, chicken and olives; and others. Get creative and let me know what you come up with – I’ll definitely be making these again so love recommendations. If you’re making this for a crowd as a portion note I ate about half of one medium potato and was very satisfied.
