Single baking sheet dinner for one

Last night my host family was away at a family event which left me in charge of dinner for myself. I had been out biking and exploring all day and wanted something easy, high in protein and high in veggies. We had some uncooked brussel sprouts and onion in the fridge plus some bell pepper and boiled potato leftover. I went to the grocery store and picked up two chicken breasts and had all the ingredients I needed for my simple and nutritious meal.

First I cut the chicken breasts in half to make then thinner before putting them in a bowl with olive oil, balsamic vinegar and some seasoning to marinated. Next I chopped the brussels and onions before tossing them with olive oil, salt and pepper. I put the veggies and chicken all on one pan which I lined with foil. I cooked it all at 200°C for 20 minutes, pausing once after 10 minutes to mix the vegetables and flip the chicken.

I served it with the pepper (not pictured) and potatoes for a super easy, filling and healthy, one-pan dinner. I also made enough to have leftovers today for lunch. This is a basic template of chicken plus veggies plus healthy carb that you can easily replicate with the veggies and carb of your choice. If you don’t have leftovers you can easily add a carb (sweet or regular potatoes a very easy) onto the sheet pan. If you’re feeling adventurous try swapping the chicken for salmon or another fish.
