This blog is about staying fed and fuled but it also is meant to appreciate food. Well this week my family came to visit me in Copenhagen and we had some great food. Copenhagen has a lot of “new nordic cuisine” and a key factor in this food is chefs who appreciate ingredients, are creative and want their food to be enjoyed. You can see this through the smaller portion sizes, fresh ingredients and beautiful platings.

To show my appreciation of chefs and restaurants who treat food as a creative art and something to take pride in I’m sharing a great meal I got to share with family and friends this past week. These are photos from the restaurant Høst in Copenhagen. The restaurant serves either a 3 or 5 course menu with lots of additional “surprise” dishes thrown in. It was some of the most creative and delicious food I’ve ever had.

Big thank yous to my dad and brother for the meal and finding the restaurant respectively. Also thank you to Høst for the beautiful and delicious meal. The care and quality ingredients that went into this meal have inspired me to try some new meals of my own. Additionally, my mom and I will try to replicate the marinated pinecone (which was packed with flavor and had the texture of a raisin) this summer so stay tuned for that.
This week I’m going on a 6 day field trip to the Netherlands. Each day we are given two meals but are responsible for either our own dinner or lunch so stay tuned for some tips on figuring out food in a new country while also balancing a packed schedule and being part of a large group.
