
I was really missing my eggs, so asked my host mom if I could start making them for breakfast, she said yes of course but when I went to make them this morning everyone else had left for the day and I was struggling to use the Danish electric stove top. Luckily, I had this fast and easy microwave omelet recipe to work with! (It’s not truly an omelet but I don’t know how else to refer to it).
Microwave Omelet:
Ingredients: 2 eggs, pam or light olive oil, salt/pepper, toppings of your choice, mug
Directions: Lightly coat/spray inside of mug with oil/pam, crack eggs into mug, add any toppings you want (I had bell pepper, parsley, salt and pepper), stir with fork, microwave for 2-3 minutes
The eggs will puff up a bit so make sure to coat whole mug, mine only took 2 minutes to cook but it may take a tad longer depending on the microwave
Honestly these were exactly what I needed to start my day, super easy to make, easy two clean (one dish cooking anyone?) and delicious. I 10/10 recommend as quick breakfast or easy snack!
