One of the keys to feeding and fueling yourself is to know yourself. And something I know about my self is that I’m not a big cookie fan. I love the idea of cookies, something small, hand held, sweet and happy, but traditional cookies are loaded with added sugars and make me feel sluggish and groggy. But since I like the idea of cookies I’ve developed my own recipe for this banana cookies. They are super simple to make and customizable to your preferences. I make them a lot at school since they only take a few ingredients and can easily be popped into the oven during a study break.
Banana Cookies:
2 ripe bananas
1-2 tablespoons Almond Butter (or other nut butter of your choice)
1 teaspoon honey
Optional Ingredients to your taste: chocolate chips, nuts, coconut flakes, protein powder, cinnamon
Mash up the bananas and add the nut butter until the mixture is not thick but not too runny either (think slightly thicker than brownie batter). Then add the honey and any other toppings and put 1 tsp sized balls on a greased cookie sheet. Bake at 350 F for 25 minutes, cool and enjoy. The ones in the photos used the basic indigents with apple slices and chocolate chips and come out to be about 50 calories with less than 3 grams of sugar per cookies. They have been a nice little treat with breakfast or a yummy afternoon pick me up. I also really like adding protein powder for when I want a drier and more filling snack.
