You may have noticed the salad in my last post. That salad and this one are examples of my typical (and favorite) lunch when I’m home. I love veggies. They’re my favorite. So when I’m home (and have more control over what is available to me) I love to pile up the veggies and add some protein and healthy fats for lunch. The veggies give me vitamins and minerals while the protein and fat give me energy and help me recover from my workouts and soccer practices.
Unfortunately its not always so easy to make yummy, healthy and filling salads like this while at school. Often the options don’t include nutrient dense vegetables or lean proteins and it can be hard to find fresh produce. Not to mention the lure of less healthy options. However, with some planning and creativity I’ve developed ways to make filling and healthy lunches in the dining halls. Follow along as I share some of my tips and tricks in coming posts.
